New install setup properly?

I just had (2) split units replaced in my home by a local HVAC co. I selected an Amana pkg with 2-stage heat and variable speed fan being the main deciding factors. Like everyone, I wanted Nest thermostats but they advised against it, so I went with the suggested Honeywell VisionPro 8000.

Here is my question: When I browse the “installer options” setting on my thermostats, they indicate that it is setup for 1-Stage heat. Also, it indicated that “equipment will control fan”. Is this correct? Meaning, am I getting the performance that I paid for with this setup? Contractor tells me that everything is setup correctly. It doesn’t seem like I ever notice the fan running slower than normal, but maybe I wouldn’t. Same goes for the heat, feels like it’s one level or off. I am the first to admit that I could be totally wrong.
