VARIABLE SPEED AIR HANDLER AND SINGLE-STAGE COMPRESSOR

Can you use a variable speed air handler with a single-stage compressor? If so, does it dehumidify better and make home more comfortable? Salesman told me variable speed air handler wouldn't make much difference, since compressor is single stage. I am in Florida and have a 14 seer single stage compressor and air handler.
