Just installed (literally three hours ago while I was work) Carrier split system plus 80% gas furnace.

Honeywell RTH6580WF (was previously in use and the fan ran at a constant speed)
I can place my hand under a register, adjust the setpoint with the Honeywell app and force the system into non-cooling mode. The airflow out of any register I can reach is reduced when the condenser isn't running.
From the brochure: Non-communicating, multi-speed operation
I think ^ that is the key.
What do I need to know before asking the contractor to come back?
