Spay foam and high humidity in my home

I have had a new home built in southwest Florida and moved in June. I feel my home has too much humidity for this time of the year.
I have been nice to my HVAC contractor but things are moving too slow on the fix...

2,006 S.F Block home with attic spay-in foam. Walls have 3/4" foam boards glued on. R-19 on the garage walls. 200 S.F. carpet in master bedroom ceramic tile throughout the rest of the home.

Unit: Lennox 3 ton 20 SEER variable fan.
Current fan speeds 400 CFM low and 1050 CFM high

Morning humidity level 56% with Afternoon levels 58% Have dehumidifier level set @47% (never hit that %) I have overcooling set at 2 degrees.

I have the T-stat set to 73, Morning its 71 @56% late afternoon 58%

When I drop the t-stat a couple of degrees the humidity goes 2% up when it runs with the highspeed fan running for 20 minutes.

It feels like damp air coming out when on high speed.

I went with this options on my home wanting lower humidity levels inside. ( I'm from South Dakota)

I probably would be ok with these numbers in the shoulder season but now I am worried about the fall season coming.

Do you think the unit is oversized? Should I have went with a lower SEER and a single fan speed?
